San Jose de Pedregal has delicate, complex notes of intertwining apple and cherry enlivened with a touch of sweet caramel.

This lot was produced by six families living in the small town of San Jose in the remote municipality of Inzá in the department of Cauca. Farms are in town of San Jose, 20 minutes from Pedregal. Inzá is in the center of the western and eastern slopes of the Cordillera Central of the Colombian Andes.

Elevated mountains separated by canyons and rivers make this land one of Colombia’s most beautiful and inaccessible. Seen way below the town of Inzá is a pyramid amidst the jumble of heaving mountains; it is far too huge to be made by humans but its shape did not escape the original inhabitants’ awe, who created a tomb that is now a UNESCO World heritage site.

Most of the coffee grown here is Caturra, a variety that is particularly expressive of the terroir here. The farms average about two acres each and every farmer processes her own coffee, to be assessed for quality at the Association.
