| Finca Malacara, located on the Santa Ana Volcano, has been in the Alvarez family since 1888. It was divided in recent times into three lots, Malacara A, B, and C., bequeathed to the three brothers of the Alvarez family. |
Malacara C is located on the north side of the Santa Ana volcano; the moist breeze from the southern Pacific Ocean provides ideal moist air and temperature. Ripe cherry is taken each day to the wet mill, El Borbollon (borboyón), a few miles away. Here the cherries are very carefully removed from their fruits and dried. El Borbollon then dry mills the coffee by sorting the “beans” by density, size and elimination of defects.
El Salvador Coffees are noted for their clean pure coffee flavors. This micro-lot 119 is a super clean, bright coffee with crystal clear notes of sweet lemon, pineapple and soft honey, with milk chocolate undertones.
