Finca Malacara C, located on the Santa Ana Volcano, has been in the Alvarez family since 1888. It was divided in recent times into three lots, Malacara A, B, and C, bequeathed to the three Alvarez brothers.
Malacara C is located on the north side of the Santa Ana volcano; the moist breeze from the southern Pacific Ocean provides ideal moist air and temperature. Ripe cherry is taken daily to the wet mill, El Borbollon (bor-boy-YON), a few miles away where the cherries are carefully removed from their fruits and dried. They are then dry milled by sorting the “beans” by density, size and elimination of defects.
